Development of a product and process innovation related to the technology of producing organic beer containing probiotic microorganisms, preserved using the refermentation process, carried out with the participation of probiotic microorganisms and the production of a food additive based on spent grain, which is a by-product of the beer production process, for the preparation of mixtures enriching bread
Description
technology for organic beer production and food additive based on spent grain
Sector
A1.1Growing of non-perennial crops
Needs/ Problem statement
developing a product and technological innovation in European scale for producing organic beer containing probiotic microorganisms, preserved using an innovative refermentation process carried out with the participation of probiotic microorganisms
Objective
The product innovation includes the development, implementation and dissemination of an innovative/innovative organic beer with a probiotic character containing live cells of the probiotic yeast Saccharomyces cerevisiae var. Bouladii. The technology proposed in the project will be the first solution of this type on an international scale, and as a strategic element, it will use high-quality agricultural products from local farmers grown in an organic system.
