Changing trends in consumer attitudes and food preferences towards reducing the consumption of meat and animal products. The vegan products available on the market is constantly expanded and modified, taking into account the growing demand for this type of products. Introducing unconventional raw materials and ready-made products creates the opportunity to diversify vegan diet.
Objective
Development, production and preservation of an innovative vegan food ingredient based on oak nuts: Development of a method for preserving embittered oak nut mass in laboratory conditions and assessment of its quality during storage. Designing and commissioning an industrial line for debittering oak nuts and consolidating the debittered mass. Assessment of the quality of industrially obtained pulp immediately, after its solidification and during 6 months of storage.
